Givaudan offers new possibilities for natural blue colours with acid stable ingredient
With recent US FDA approval, Everzure™ Galdieria will provide a vibrant alternative to Blue 1 for beverages & confections
LOUISVILLE, KY | 9 May, 2025 | Givaudan Sense Colour is pleased to announce FDA approval for EverzureTM Galdieria, a natural colour additive made from Galdieria sulphuraria. Developed in collaboration with French biotech company Fermentalg, this novel blue is fermented and extracted from microalgae using patented processes. The result is a phycocyanin-rich natural blue colour, similar to spirulina, with complete traceability and acid stability that broadens the scope of application and use beyond where spirulina can be used.

Leveraging Fermentalg’s deep expertise in blue biotechnology and precision fermentation, Everzure™ Galdieria is sustainably produced via the controlled fermentation of the microalgae Galdieria sulphuraria, followed by a gentle water extraction. Fermentalg’s proprietary fermentation process ensures consistent quality, efficient resource use, and scalable production—hallmarks of its leadership in algae-based innovation.

Approval by the US FDA marks the first authorisation for use in food and beverages, with additional petitions in process in Europe and the UK. Everzure™ Galdieria is currently available for sampling in the US with production scale-up beginning in H2 2025.
