It is gently extracted using water, resulting in a simple label and is a cost-effective anthocyanin option that has transparency all the way back to the farmer. Amaize® is great for red shades in beverages, confections, fruit preps, and frozen novelties. As the pH of the application increases, the hue shifts toward purple tones.
